Crushed, not mashed, so you are allowed to leave the vegetables in chunks. Change the vegetables to make your favourite combo!

Ingredients

  • 2 large potatoes, peeled and quartered
  • ½ celeriac bulb, peeled
  • 4 parsnips, peeled

Method

  1. Cut the potatoes, celeriac and parsnip in to pieces the same size and boil in salted water until the vegetables are cooked through. This should take approximately 25 minutes.
  2. Drain them very well and return to the pan. Crush the vegetables lightly with a fork or hand masher and stir the butter through (and cream, if using). Taste and season.
