Here’s a simple variation of plain rice that goes perfectly with many light-flavoured dishes.

Ingredients

  • 300–400 g dry weight american long grain rice
  • 2 litres water
  • good pinch

Method

  1. Follow the recipe to cook the rice
  2. Drain well and stir the butter or oil and chopped chives through. Season to taste. Serve immediately or chill and follow the advice for reaheating.
