You can buy tabbouleh in the supermarkets ready made, but it is so simple to make yourself and if you make it in the summer with fabulous tomatoes and fantastic cucumbers it is a joy!

Ingredients

  • 1 300 ml mugful of couscous
  • 4 tablespoons olive oil

Method

  1. Pour the measured couscous into a mixing bowl and stir in half of the olive oil. Put the stock into the mug and refill with the boiling water. Stir until dissolved. Pour over the couscous with the lemon juice. Stir well and leave for 10 minutes.
  2. When the grains have swollen add the chopped tomatoes, onion, cucumber, remaining olive oil and mint. Season with sal
