This originated in our Austrian chalets using pumpkin, but sweet potatoes are just as good. Try using butternut squash, too.

Ingredients

  • 4 large sweet potatoes
  • 2 tablespoons vegetable oil
  • 1 teaspoon

Method

  1. Put the roasting tin into the oven to heat up for at least 10 minutes (see tips). Peel and cut the sweet potatoes into large, mouth-sized pieces and toss with the oil and caraway in a mixing bowl. Season with salt and pepper.
