These greens are delicious without dominating the flavour on the plate – a perfect attribute for a side dish!

Ingredients

  • 600 g spring greens
  • 50 g butter
  • 1 teaspoon

Method

  1. Slice the greens and wash them well in a colander. Five minutes before serving put the greens into salted boiling water or steam if you prefer. Drain and add the butter and chopped juniper berries to the pan.
  2. Return the greens to the pan, toss well with the butter mix and serve immediately.
