I do grow beetroot in my garden, but I consider it a real treat when I cook it. The rest of the time I buy vacuum-packed beetroot as it is so easy to conjure up fabulous beetroot delights!

Ingredients

  • 1 clove garlic
  • 150 ml double cream
  • salt and pepper<

Method

  1. Chop the garlic finely and mix with the cream. Season well with salt and pepper.
  2. Slice the beetroot and layer into an ovenproof dish. Pour over the cream, top with the cheese and bake uncovered for 20–25 minutes
