Under the ski pistes, so thick with snow in the winter, lie hidden acres of allotments that come to life in the summer. A friend always brings me potatoes from her allotment and she once cooked me this dish – bon appetit!

Ingredients

  • 300 g small waxy potatoes, washed
  • 2 tablespoons olive oil
  • 1

Method

  1. Boil the potatoes, whole, skins on, in salted water until just tender. At the same time mix all the dressing ingredients together. Taste and season.
  2. Drain the potatoes, cut them in half, add to the dressing and serve immediately.
