This is not a new salad, but an excuse to make a thick, pungent Balsamic glaze as the dressing. Don’t limit using the syrup to this recipe – it is also fabulous drizzled over chargrilled chicken or over sliced, fresh, ripe tomatoes.

Ingredients

  • 4 handfuls wild rocket, washed
  • 125 g parmesan

Method

  1. Put the syrup ingredients into a saucepan and boil without a lid until you have 150 ml – measure it. Strain through a sieve and store in a jar in the fridge for up to 3 weeks. Make more and store more!
  2. Use a potato peeler to peel shavings off the parmesan until you
