I ate a similar salad to this in Mexico with large, home-fried taco chips and a chargrilled steak on top. It was magical. Back on home soil, I tried many different grains until I found pearly spelt, which was the closest to the original grain.

Ingredients

  • 200 g dried weight pearl spelt
  • 2 tablespoons olive oil
  • 1 tablespoon

Method

  1. Bring a pan of salted water to the boil and add the spelt. Stir until the water re-boils then turn the heat down, cover and simmer for 20–25 minutes or until the spelt is tender. Drain well.
  2. Mix the oils, vinegar, mustard, sage and cumin together and season with salt and pepper. Peel and cut the avocado into mouth-sized chunks and add to the salad dressing imme
