I became a fan of cold, cooked courgettes on a drive from France to the south of Italy. I ate them steeped in olive oil and on every cold plate of antipasti. Here they are with pasta.

Ingredients

  • 300 g dried penne
  • 2 medium courgettes, diced
  • 2 tablespoons

Method

  1. Cook the penne in salted boiling water for 12 minutes until tender. Drain and run under cold water to cool.
  2. Meanwhile, fry the courgettes in olive oil over a high heat until brown all over. Add the garlic and fry for 1 minute more. Add the lemon juice and yoghurt. Mix the pasta with the courgette/yogurt mix, taste and season. Rip the basil leaves and stir toget
