Make this only when the fresh ingredients are in season or it is bitterly disappointing.

Ingredients

  • 2 large beef tomatoes
  • ½ cucumber
  • ½ red onion
  • 10

Method

  1. Cut the tomatoes, cucumber and onion into mouth-sized pieces. Chop the parsley roughly and add to the mix. You can prepare this up to 6 hours ahead and store in the fridge.
  2. Just before serving, mix in the pesto, olives, Feta and lemon juice. Serve immediately.
