This recipe was an accident. I incorrectly measured the ingredients and it all flopped everywhere, but it looked fantastic and so I now always make it like this. You do not need to be a good pastry-maker for this as you can break it, mend it, push it back together and it is all fine!

Ingredients

For the Pastry

  • 250 g plain flour
  • 125 g caster sugar
  • 1

Method

  1. Put the flour, sugar, cinnamon and butter in a food processor and blend until you have fine breadcrumbs. You can also do this by hand in a bowl, rubbing the fat and flour between your fingers and thumbs. Add the cream and blend for a minute until the dough comes together.
  2. Turn out onto a floured surface and knead to form a soft dough. Divide the pastry in two.
