These are more like puddings than soufflés, but there is no flour so they’re not sponges. They are quite divine and really no stress to make.


  • 25 g soft butter
  • 250 g mascarpone cheese
  • 150 g</


  1. Rub the butter on the inside of all the ramekins using your fingers or a piece of kitchen paper.
  2. Mix the cheeses, cocoa, sugar and eggs together in a food processor or a bowl using a hand whisk. You can make this mix up to 8 hours ahead.
