This is a fast version of tiramisu that needs little or no time to set. It can be flung together in moments and is a real hit. And it is perfect for those avoiding raw eggs.

Ingredients

  • 200 g white chocolate
  • 250 g mascarpone cheese
  • 150 ml

Method

  1. Melt the white chocolate in a bowl over a pan of simmering water. Leave to cool for 10 minutes.
  2. Beat the mascarpone then add the cream and whisk together. Add the melted chocolate, stir together and leave to one side.
  3. Put the warm coffee and the brandy in a bowl. Dip the sponge fingers in the liquid and leave them to soak it up. Put 1–2 soaked biscuit
