Ideally a pudding should suit all the guests, but my recipes for no-cook cheesecakes have always included gelatine. This makes the pud unsuitable for vegetarians, so in search of a no-cook, no-gelatine recipe the other Lucy and I have made, tasted and eaten too much of too many!
