‘Parfait’ literally translated from French means ‘perfect’. In cooking terms we think of it as something creamy, layered with ice cream, usually in a glass. This has to be one of the easiest, fastest and simplest puds, but do you know what? It is ‘parfait’!

Ingredients

  • 100 ml double cream
  • 50 g caster sugar
  • 125

Method

  1. Beat the cream, sugar and mascarpone together, adding the raspberry juice to loosen to a spoonable consistency. This can be made up to 4 hours ahead and stored in the fridge.
  2. Crush the meringues into large pieces.
  3. Put a spoonful of raspberries in the bottom of each glass, then add a scoop of vanilla ice cream. Sprinkle a few meringue pieces on top and
