In the winter it is hard to find a fruity pudding that works despite the lack of good-flavoured, fresh fruit. Frozen berries are perfect for this so it is an ideal recipe for any time of the year!


  • 250 g frozen red berries/fruits of the forest
  • 50 g caster sugar


  1. Save a few berries for decoration and put the rest into a saucepan. Add the caster sugar and warm through until the berries are soft. This should take about 2–3 minutes. Push the berries through a sieve making sure you get all the pulp, not just the juice.
  2. Whisk the crème fraîche and cream until thick, adding icing sugar to taste.
