White wine pears with cinnamon cream

We’ve cooked them in red wine, so why not in white? This is a truly aromatic pudding and much lighter than its red wine cousin.

Ingredients

  • 4 large pear-shaped pears
  • 250 ml dry white wine
  • 100 ml

Method

  1. Put the wine, sugar and spices into a saucepan and heat gently until all the sugar has dissolved. Meanwhile, peel the pears whole and then slice a thin layer off the bottom so the pear will stand up once cooked. Using a small, sharp knife whittle the core out from the bottom.
  2. Put the pears into the wine and put a lid on the pan. Bring to the boil and then turn
