  • 1 large pineapple with leaves
  • 125 g brown sugar
  • 150 ml


  1. Quarter the pineapple lengthways retaining the leaves on each quarter. Lie each quarter on a chopping board, skin side down, and use a sharp knife to cut away the inner core so you have a flat-topped wedge.
