Not being a huge fan of chocolate or really sweet puddings, I am always on the look out for citrus-based recipes. There are lots of mousses and creamy puddings, but here is a light, baked, lemony pud that is somewhere between a sponge and a hot souffle. You can make the mix ahead and bake them while you are eating a main course, which makes them perfect for sharing with friends.
