The other Lucy came across this recipe some years ago – it is a juicy, orangey and succulent pudding. It appeared on our catering menu and someone put in an order for ‘range cake’. We were bemused, but on checking there was a typo and the ‘o’ had been missed off. It has been ‘range cake’ to us ever since! We like to serve it with a pecan cream.
