There’s nothing new here, except that this recipe has been cooked in the chalets over and over for years so I can guarantee it works brilliantly! Every time we take it off a menu we have cries to bring it back – I hope it will become a favourite of yours too.

Ingredients

  • 150 g dates, stoned and finely chopped
  • 150 ml boiling water

Method

  1. Put the dates into a mixing bowl and pour the boiling water over. Add the vanilla and coffee and leave to one side.
  2. Wipe the insides of 6 ramekins with vegetable oil or melted butter or line an ovenproof dish with baking parchment.
  3. Put the butter, sugar and eggs into a food processor and blend. Add the flour and ‘pulse’ until just mixed. Turn this mix
