This is an excellent alternative to a crumble topping. It is very easy to make and cooks quickly.

Ingredients

  • 100 g unsalted butter, softened
  • 100 g caster sugar
  • 3

Method

  1. Beat the butter, sugar, almonds and eggs together. This can be done ahead and the puddings made up just before baking.
  2. 15–20 minutes before serving, spoon the mixture over some fruit in ramekins, dust generously with icing sugar and bake uncovered. The mixture will rise a little, firm up and go very brown on top.
