Some mousses and soft puddings need a little biscuit on the side. Here is our basic shortbread recipe and a few exciting variations to lift your puddings to new heights!

Ingredients

  • 125 g butter (see tips)
  • 55 g caster sugar
  • 120

Method

  1. Beat the butter and the sugar together until pale. Stir in the plain flour and cornflour until you have a smooth dough.
  2. Line a 20cm loose-bottomed sandwich tin with baking parchment and press in the dough. Sprinkle with a little extra caster sugar and chill in the fridge before cooking (see tips).
