Some mousses and soft puddings need a little biscuit on the side. Here is our basic shortbread recipe and a few exciting variations to lift your puddings to new heights!
Beat the butter and the sugar together until pale. Stir in the plain flour and cornflour until you have a smooth dough.
Line a 20cm loose-bottomed sandwich tin with baking parchment and press in the dough. Sprinkle with a little extra caster sugar and chill in the fridge before cooking (see tips).
