My son Sam has made chocolate cake for years. This is a recent recipe that he has put together since he started baking muffins. Our muffin recipe from one of the chalet hosts in America used sour milk and Sam decided it was the clue to light and soft sponge. This is not a traditional cake recipe in that it is almost more like a sponge pudding in texture, but with the fudge icing it is delectable. We often make it as a pudding as well as a tea cake.
