This cake makes a great alternative to a Christmas cake if you are not keen on the very rich texture of a traditional cake. You can ice it with a plain icing made with icing sugar and a little water, but it does not cope well with being covered with marzipan.

  • 300 g butter
  • 50 g raisins

Method

  1. Put 50 g of the butter in a saucepan with the raisins, brandy or water, apricots, cherries and almonds. Melt the butter and mix the ingredients together. Cover and leave to one side.
