My Auntie Dee gave this recipe to my Mum who has made this fruit loaf for as long as I can remember. She made it in bulk for school fetes, charity cake stalls and bridge teas. If you need a cake to make ahead, this is the one. It tastes even better after at least 4–5 days and it will keep for a couple of weeks. It’s also fat free!
