Working with chalet staff in North America has been a real eye-opener. To have feedback on what is eaten in restaurants, is available in the shops and recipes that they pick up is fascinating and has resulted in several favourite recipes. I learned that a dash of coffee can bring out a caramelly flavour, so here is our ‘coffee’ toffee cake.
