When Sam had a muffin phase, we made loads of them and we found that they are really at their best the day you make them. They are so quick to make, you can almost bake them fresh when you want to eat them. The American recipe I had used buttermilk so we used yoghurt instead.

Ingredients

  • 250 g self raising flour
  • 1 teaspoon baking powder

Method

  1. Sift the flour and baking powder into a large bowl, then stir in the chocolate and sugar. Add the beaten eggs, yoghurt and then the butter and milk and stir to combine. It doesn’t matter if the mixture looks a bit lumpy, it’s more important not to over-mix or the muffins will be tough.
