Our Red Cross committee does not have a produce stall or an open garden without the presence of lemon drizzle. So I include this recipe, with thanks to the Red Cross committee for the laughs and love while organising and manning events for the last few years. A great group of ladies!

Ingredients

250 g caster sugar
250 g butter, at room temperature

Method

Line the roasting tin with baking parchment. Beat the sugar and butter together with the lemon zest until smooth and pale.
Add the eggs one by one, mixing in between and adding a spoonful of the flour if the mixture splits.
Stir in the remainder of the flour, then add the lemon juice and mix together.
Spoon the mixture into the roasting tin
