An American friend of mine once told me that she put cream cheese in her brownies. I never had her actual recipe so it was a bit of trial and error on my part. I could not get them to work until I used cocoa instead of chocolate – then they were a dream. Serve cold or warmed up with ice cream (a favourite at our family celebrations!).

Ingredients

  • 200 g butter
  • 400 g sugar
  • 100 g

Method

  1. Line the roasting tin with baking parchment.
  2. Put the butter, sugar and cocoa into the saucepan and melt together.
  3. Remove from the heat and add the salt, eggs, vanilla essence and cream cheese. Beat together well. Add the flour and chopped chocolate and gently mix together.
