These are chewy cookies that are easy to eat! You can vary the dried fruit you add. I make them with a little candied peel and cinnamon instead of raisins at Christmas time.

Ingredients

  • 100 g butter, at room temperature
  • 75 g caster sugar

Method

  1. Cover each baking sheet with baking parchment.
  2. Beat the butter, sugar and honey together, then add the egg, flour, cornflour and lemon zest and mix well. Add the raisins and use your hands to mix in well.
  3. With clean hands, roll the mixture into 12 large balls or approximately 20 small ones and place on the baking sheets (not more than 6 big ones on a
