There are so many seeds in supermarkets now that this combination is only really the beginning of experiments into fruit and nutty flapjack. Pumpkin seeds are one of my favourites as they are big and crunchy. My son loved the sour cherry and poppy seed ones I made the other day, though!


  • 200 g butter
  • 125 g brown sugar
  • 4 big ta


  1. Line the roasting tin with baking parchment.
  2. Melt the butter, sugar and honey in a saucepan. Add the salt (if using unsalted butter), oats, coconut, pumpkin seeds and cranberries and mix together well.
  3. Spoon the mixture into the lined tin and smooth out to an even layer. Bake<
