I love ginger and I love shortbread, so for me this is the ultimate biscuit.

Ingredients

  • 150 g caster sugar
  • 200 g butter, at room temperature

Method

  1. Line the baking tray with baking parchment.
  2. Use an electric whisk to blend the butter and sugar until soft and creamy. You can also do this by hand with a wooden spoon. Add the flour, salt, cornflour, ginger and vanilla essence. Squeeze the mixture together with your hands to form a dough.
  3. Press the dough into the tin so it spreads out to the edges. P
