There can never be too many mince pies as far as I am concerned, but I find them a bit of a chore to make. This is somewhere between shortbread and cake and is a welcome change to cook and eat. They are a little untraditional, so serve them any time of year. You don’t have to wait until Christmas to enjoy them!

Ingredients

  • 250 g plain flour
  • 150 g butter, at room temperature
  • 150

Method

  1. Put the flour and butter into a bowl and rub together between your fingers and thumbs to form a crumb-like mix.
  2. Add the mincemeat, milk and sugar and stir together to form a dough.
  3. Press the mixture into the lined flan tin and bake for 20 minu

I had a friend coming for morning coffee, and didn't have time to make mince pies, so this looked like a good alternative. Quick and easy to make and still Christmasy. I didn't bother with the icing and am not sure that it's needed. My shortbread turned out a bit doughy but we all enjoyed them.
