For the Dumplings

  • 300 g (10½ oz) pike, skinned and boned
  • 2 egg whites

Method

Making the dumpling mixture

Work the pike flesh through a sieve or use the finest blade of a mouli-légumes. Transfer it to a bowl placed over crushed ice and allow to chill.

Work in the egg whites, one at a time, with a wooden spatula. Gradually add the cream, season with salt, pepper and nutmeg, and chill for 2-3 hours.
