We all resort to pasta recipes for quick and easy meals—so here’s another to add to your repertoire. This is one of those dishes I’ll cook when we’re in the mood for comfort food, and the ingredients are usually sitting in my refrigerator. If I don’t have any cream, sour cream or plain yogurt makes a convenient substitute.

Ingredients

  • 9 ounces dry penne
  • a drizzle olive oil
  • cup diced ba

Method

  1. Bring a large pan of lightly salted water to a boil, add the penne and return to a boil. Leave to boil about 10 minutes until just tender.
  2. Meanwhile, heat the oil in a large skillet over medium heat, add the bacon and fry 5 minutes, or until golden. Drain off any excess fat, then add the leek to the pan. Fry over low heat 5 minutes, or until soft. Pour in the w
