This is the quickest, easiest pizza kids (and adults) of all ages enjoy. Simply spread 1 tablespoon tomato paste or sun-dried tomato paste onto a piece of wheat tortilla. Scatter grated cheddar cheese (or half cheddar and half grated mozzarella) over. Leave plain or add chopped cooked ham, salami, shredded chicken, drained and flaked canned tuna, sliced olives, corn kernels, sliced onion or halved cherry tomatoes. Don’t add too much or the pizza will be top heavy. Put the tortilla on a cookie sheet and cook in an oven heated to 425°F 8 to 10 minutes until the cheese melts.
P.S. It is worth making one more than you think you’ll need of these, because they will be gone in seconds!
