The beauty of this recipe is that you can make the turnovers small for young children or big, using larger salmon fillets, for adults. You can also make these using phyllo pastry dough, layering three sheets together and brushing with melted butter between each.

Ingredients

  • ¾ cup mascarpone or cream cheese
  • 2 tablespoons chopped dill or snipped chives

Method

  1. Heat the oven to 425°F. Line a cookie sheet with parchment paper or use a nonstick baking sheet.
  2. Mix together the mascarpone, dill, mustard, lemon zest and scallions, and season lightly with salt and pepper. Spread over the top of the salmon fillets.
