Method

Heat the oven to 400°F and line a cookie sheet with parchment paper.
Heat the oil and butter in a skillet over low heat, add the leek and cook gently a few minutes, or until soft. Remove the skillet from the heat.
Lay the dough on the prepared cookie sheet, score a ¾-inch border with a sharp knife
