So quick to make and almost as quick to disappear, these nutty, crumbly cookies are a real family favorite. They are also so easy to make that the kids can help you. Use chunky or smooth peanut butter, whichever you prefer or happen to have in the cupboard.

Ingredients

  • ½ cup butter, soft, plus extra for greasing
  • cup sugar
  • 5 tables

Method

  1. Heat the oven to 350°F and grease two cookie sheets with butter and line with parchment paper.
  2. Using an electric mixer, in a large bowl, beat together the butter and sugar until light and creamy. Mix in the peanut butter and egg yolk until combined, then mix in the flour to give a soft dough.
  3. Take a heaped teaspoonful of the dough and roll into a ball
