  • cups chopped cooked beets (not in vinegar)
  • 5 tablespoons sour cream

Method

  1. Whiz the beets, sour cream, mayonnaise, salt and pepper in a food processor until smooth and a fabulous pink color.
  2. Spoon into a serving bowl and serve sprinkled with the chives.
