  • 2 cups frozen peas, thawed
  • 5 ounces soft goat cheese
  • 1 large


  1. Whiz together the peas, goats cheese, mint leaves, garlic, lemon zest and extra virgin olive oil in a food processor until you have a relatively smooth consistency. Add lemon juice and salt and pepper to taste.
  2. Spoon into a serving bowl and add a sprinkling of extra mint leaves and / or lemon juice to serve.
