Here is another gazpacho recipe, believed to have been brought back to France from holidaymakers in Malaga. Although hardly typical of the South-West, it is an example of the kind of food that younger people in particular are looking for outside their family environment.

Method

Soak the bread in water for about 15 minutes until softened.

Combine the almonds and garlic in a food processor and pulse until the almonds are finely ground. Squeeze the water from the bread and add it to the food processor then blend to a smooth paste. With the motor still running, add the oil in a slow stream, followed by the vinegar and salt. Beat in
