As summer draws to an end, the potagers all over the countryside become overtaken by members of the squash family, their tentacle-like runners threatening to strangle the last few haricots verts trying to survive their onslaught. The delicate young courgettes make a delicious soup.

Ingredients

  • butter and oil (sunflower)
  • 3 medium-sized onions, chopped
  • 1 kg courgettes<

Method

Heat enough butter and 1 tbsp oil in a large casserole (with a lid). Sweat the onions gently, covered, until they are translucent and soft. Add the courgettes and let them soften slightly, helped by a little salt, adding a bit more butter/oil if necessary.
