After the delicate young courgettes, which can mature alarmingly overnight into tough old marrows, come a wide range of pumpkins, ranging from the round orange citrouille to the flatter, bright red potiron. Many regard these as interchangeable in the kitchen although the potiron is said to have the sweeter flavour. Butternut squashes are now also fashionable. They roast beautifully to accompany red meats as well as making a delicious soup.
