A more recent discovery in the South-West is the butternut squash, already familiar to British gardeners and cooks. One of our dear neighbours, Odile Mader, has given us the recipe for what she calls a velouté, a thickish purée. Her husband Alain confirms that this not a soupe in the old-fashioned sense, nor a potage; the style is familiar to those who buy ready-prepared soups in the shops, but none of those will taste as good as this.
