The South-West is land-locked apart from its Atlantic seaboard, where commercial fishing is dominated by the intrepid Basques operating largely out of St Jean de Luz and its neighbouring harbours. Fish soups are therefore unusual inland of that area but are nevertheless an important part of the Basque diet. The following recipe stipulates hake as a base, but in truth the locals will probably use whatever fish they find in their nets.
