Courgette flowers, once considered the monopoly of the markets of Provence, have spread to the South-West. This is hardly surprising in a part of France where courgettes are so widely grown in everyone’s potager.
Prepare the filling by softening the onion and courgettes in 1 tbsp of oil over a medium heat for 2-3 minutes. Remove from the heat and stir in the garlic, herbs, breadcrumbs and seasoning. Allow to cool, then mix in the egg yolks.
