For the fritter batter

  • 3 tbsp olive oil
  • 120 g plain flour, sifted
  • pinch

Method

Prepare the fritter batter 2 hours ahead of time. Make a thickish cream by blending the oil into the sifted flour and salt, then beat in the water until smooth.

Just before frying, beat the egg white until stiff, then fold into the batter. Heat the oil to 190C/375F. Spike the flowers on a skewer or knife, dip them into the batter to coat well, then deep fry a few at a time for about 3 m
